There are several versions — the recipe can be readily changed with whatever fruits and nuts you have on hand — but my favorite is this one, which is loaded with crisp apples and plump raisins and covered with a crunchy walnut topping. It may also be prepared ahead of time and reheated wonderfully.

Ingredients
  

  • 3 cups rolled oats
  • 1 cups brown sugar
  • 2 tsp ground cinnamon
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 cups milk
  • 2 eggs
  • ½ cup melted butter
  • 2 tsp vanilla extract
  • ¾ cup dried cranberries

Instructions
 

  • In a large bowl, combine the oats, brown sugar, cinnamon, baking powder, and salt.
  • Combine the milk, eggs, melted butter, and vanilla extract in a mixing bowl.
  • Mix the dried cranberries. Half-fill a 9×13-inch baking pan with the batter.
  • Preheat the oven to 400 degrees Fahrenheit and bake for 40 minutes.

Notes

The amount of sweetener may be modified to taste; I suggest using at least ¼ cup (mildly sweet) but no more than ¾ cup (really sweet).
If preferred, the oatmeal mixture can be frozen overnight, then removed and let to rest at room temperature for 20 minutes while the oven preheats before baking as suggested.
