For a party-pleasing appetizer, a creamy shell holds tangy cranberry, creamy brie, and crunchy walnuts. Bonus: You can make these up to three days ahead of time by wrapping them in plastic wrap before baking and storing them in the refrigerator. It looks that warming or leaving it at room temperature is fine.

Ingredients
  

  • 1 (8-ounce round Brie cheese with the skin removed, cooking spray
  • ½ cup cranberry sauce
  • 1 sheet frozen puff pastry, reheated
  • cup walnuts, coarsely chopped,
  • salt to taste

Instructions
 

  • Preheat the oven to 375° Fahrenheit (190° Celsius).
  • Using nonstick cooking spray, coat a 24-count mini-muffin pan.
  • Cut the brie into 1-inch (or slightly smaller) squares and keep them refrigerated until ready to use.
  • Combine orange marmalade and cranberry sauce in a small bowl. Remove from the mix.
  • Roll out the crescent dough tub on a lightly floured flat surface, such as a big wooden cutting board. Pinch the seams together and stretch gently to make an equally-sided rectangle. Cut into 24 squares of equal size.
  • Place the squares in the muffin cups that have been made. Top with a brie cheese square and a spoonful of the orange-cranberry mixture (or a bit less). Add a few chopped nuts and a sprig of rosemary on the top.
  • Bake for 10-13 minutes, or until golden brown and dough are cooked through, sliding the muffin tin into the oven.
  • Allow for cooling 5-10 minutes before serving warm.

Notes

TO STORE: Refrigerate leftovers for up to 3 days in an airtight storage container.
REHEAT: Place bits in a tiny muffin tray and bake at 350°F until warm. These bites can also be served at room temperature.
TO FREEZE: Bake the Brie bits according to the package directions and set aside to cool fully. Then, on a baking sheet, arrange the bits in a single layer and freeze until firm. For up to 2 months, freeze the bits in a single layer in an airtight freezer-safe storage container or ziptop bag. Reheat till hot in a 350°F oven from frozen.
TO MAKE AHEAD: Fully arrange the bits in the muffin pan and store them unbaked in the refrigerator for up to 3 days before baking. These nibbles may also be fully baked and frozen for up to 2 months. Notes about this can be found in the section above.
