Indian Butter chicken, popularly known as chicken Makhani, is a South Asian dish made with grilled chicken in a spicy, buttery, and creamy tomato sauce. This delicious and tasty dish is very popular among Indian food lovers all over the world.

Butter chicken is said to have been made by Kundan Lal Gujral, the owner of the Moti Mahal restaurant in Delhi, India, between 1930 and 1935. The restaurant had a large order of tandoori chicken most of the time but sometimes had dried leftovers.

Butter Chicken is a favorite among families with little children since it is a gentler curry than other Indian curries. You are free to use as much or as little chili as you choose. In other words, you have complete control over how hot it is.

As previously said, the juicy and soft, flavor-infused chicken begins with a simple yogurt marinade created from scratch, consisting of plain yogurt, fresh garlic and ginger, and common spices.

You may use boneless, skinless chicken thighs or breasts. We like dark meat, but you are free to eat anything you like.

  • To start, combine your yogurt marinade ingredients.
  • Marinate the chicken for at least 20 minutes, or overnight if you have the time. (The more the chicken marinates, the softer it will be.)
  • In a skillet or pan, sear the chicken. To make your sauce, keep those charred chunks on the pan. Flavor comes from browned bits. If you have a lot of burnt bits stuck to the pan, you can get rid of part of them.

Kashmiri Lal Mirch:
Kashmiri Lal Mirch, a red chile kind native to Kashmir’s northern region, gives butter chicken its color and name. How to Make it Lighter

If you want to lighten it up a bit, try:

Chicken breasts can be replaced for chicken thighs (only be sure to cook to 165 degrees F, not higher or lower). They will dry out if cooked at a high temperature).

Lower the butter to 2 tablespoons.

In place of cream, use half and half (you may or may not want the chicken broth with this option, so wait to add it after mixing in).

Can It Make in an Instant Pot?

Yes, you can make butter chicken in a pressure cooker (it simply won’t be as tasty as the broiled version). Here’s how I’d go about it:

  • Marinate the chicken in the mixture as recommended.
  • In the Instant Pot, sauté the onion in butter for about 6 minutes on the saute setting. After that, add the garlic, ginger, and spices and cook for 1 minute.
  • After turning off the instant pot, add the tomatoes, chicken stock, and chicken combination.
  • Cover the valve and turn it to the “sealing” position. Cook for 6 minutes on high pressure.
  • When the timer goes off, quickly release the chicken pieces and remove them. Using an immersion blender, purée the sauce and let it cool somewhat.
  • Add the cream and mix well. Then add the chicken and cilantro to complete.

Ingredients
  

  • 1 cup butter, divided
  • 1 onion, minced
  • 1 tbsp minced garlic
  • 1 (15 ounces) tomato sauce
  • 3 cups heavy cream
  • 2 tsp salt
  • 1 tsp cayenne pepper
  • 1 tsp garam masala
  • pound skinless, boneless chicken breast, cut into bite-sized chunks
  • 2 tbsp vegetable oil
  • 2 tbsp tandoori masala

Instructions
 

  • Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius) 
  • In a medium-sized pan, melt a couple of tablespoons of butter. Stir in the onion and garlic and simmer, medium heat, for approximately 15 minutes, or until the onion has caramelized to a dark brown color.
  • Meanwhile, cook the remaining butter, tomato sauce, heavy cream, salt, cayenne pepper, and garam masala in a pan over medium heat. Put to a low simmer, covered, and cook for 30 minutes, stirring gently. Then add the onions that have been caramelized.
  • While the sauce is boiling, cover cubed chicken breast in vegetable oil, season with tandoori masala, and layout on a baking sheet.
