Pesto Grilled Shrimp

Pesto — an Italian sauce prepared from olive oil, basil, garlic, almonds, and Parmesan cheese — may be used in a variety of ways, but this cooked shrimp with pesto has to be one of my loves. The shrimp go in a hurry, whether served as a dinner meal with pasta and vegetables or as an appetizer on their own. Make more, no matter how much you think you’ll need!

Pesto Grilled Shrimp

With summer coming, it's grilling season, and one of my favorite things to grill is meat on a stick! I mean, what's wrong? You have meat, sticks, and fire! Mmm… While I usually think of chicken first when it comes to meat on a stick, you can't go wrong with juicy, plump shrimp either! I got the idea for the Grilled Pesto Shrimp on Gina's Skinny Taste a few months ago and was looking forward to summer. so I could use some fresh basil, fire up the grill, and try them out. The recipe could not be simpler, just make the pesto, marinate the shrimp, skewer them on sticks and grill them, and it's good as you will want to do every week this summer!

  • 2 pounds extra-large (26/30) or jumbo shrimp
  • 6 tbsp olive oil (extra virgin)
  • 1 cup basil leaves
  • 3 Pcs cloves garlic, coarsely chopped
  • ¼ tsp red pepper flakes
  • ½ tsp salt
  • ¼ Cup Parmigiano-Reggiano-Reggiano grated
  • ¼ Cup walnuts
  • 1 Pcs lemon


  • Begin by creating the pesto: in a blender or food processor, mix all of the ingredients and process until smooth.
  • Two tablespoons of the fresh pesto will be reserved for the grilled shrimp, and the remainder will be thrown over the shrimp.
  • Stir to coat, then marinate for 30 minutes at room temperature.
  • Preheat the grill to medium-high heat and grill the shrimp for a few minutes on each side. Be careful not to overcook them!
  • Just before serving, add the pesto reserved for the grilled prawns. I know it sounds like just a bit, but the pesto is very strong and garlic so you don't want to overdo it.


Serve with plenty of napkins and enjoy your meal!
