Delicious and silky sugar-free, minimal low carb chocolate mousse. It also has fewer than four net carbohydrates per serving, making it an excellent low-carb dessert choice. It might also be perfect for diabetics or anyone trying to reduce their sugar intake as it is a carbohydrate dessert.

Sugar-Free Chocolate Mousse

This is not the same as my Sugar-Free Chocolate Pudding Cake recipe. This dish isn't really also not a cake, but it is also not a pudding.

  • 1 tbsp cold water
  • 1 tsp unflavored gelatin
  • 1 tbsp boiling water
  • 1 cup Splenda
  • ½ cup unsweetened cocoa powder, such as Ghirardelli
  • tsp salt
  • 1 cup heavy whipping cream
  • 1 tsp vanilla extract
  • 1 cup whipped cream, mildly sweetened with Splenda (Optional)
  • 2 tbsp cocoa powder unsweetened


  • In the refrigerator, chill a medium mixing bowl.
  • For now, fill a small dish partly with cold water. Sprinkle gelatin over the top and set aside for 1 minute.
  • Mix in the hot water until the gelatin is completely dissolved. Remove that dish from the mix.
  • In a chilled mixing bowl, mix together Splenda, cocoa powder, salt, whipping cream, and vanilla just until mixed. Beat the mixture with an electric mixer at medium speed until it softens. To avoid making butter, don't over-beat the mixture.
  • In a separate bowl, mix together the sugar and water until smooth. To keep the texture, be careful not to over-beat.
  • Chill the mousse for 1 to 2 hours before serving in beautiful dessert plates or martini glasses.
  • If desired, top with creamy mildly sweetened with Splenda and a covering of chocolate powder.


  • This dish may be prepared up to a day ahead of time. If you’re not serving it right away, wrap the bowl or dishes in plastic wrap and store them in the refrigerator.
  • Put the mousse in elegant individual cups or glasses, such as wine glasses or martini glasses, to dress it up.
  • You may serve the mousse simply or with extra whipped cream and chocolate powder once it has been set in the refrigerator. The gelatin and heavy cream in the mouse assist to solidify the dish and give it a hard but creamy texture.
